下部では、刈り取った稲を束にしています。根元のあたりを結わえています。中段では、おそらく稲穂から稲をたたき落としています。この行程は、棹で稲を落とす「脱穀」という部分です。上部では大勢で臼を回して籾殻を落としています。現在では精米と呼ばれる部分です。
江戸時代当時にどんな道具がどのように使われたかがわかる、すばらしい挿絵だと思います。もともと女大学は教科書の役割がありますから、ここまで説明的な絵なのでしょう。多少消えかかっている部分もありますが、全体としてはなんとか使える素材だと思います。
